- 1.5c organic dried apricot
- .5c raw almonds, toasted
- 2tbsp shredded coconut, toasted
- 1tbsp coconut oil, melted
- pinch of coarse sea salt
- 2oz 85% cacao chocolate, melted (optional)
line an 8 x 8 pan with parchment paper. allow the paper to extend far enough to use it to lift the treats out at the end.
press the mixture into the pan, drizzle with melted chocolate and sprinkle with remaining toasted coconut.
refrigerate until set (about 30 minutes).
