coconut lemon yums


  • 1 1/2 c almond flour
  • 1 1/2 c unsweetened coconut, medium shred
  • 1/3 c coconut flour
  • generous pinch of sea salt
  • 4 tbsp maple and ground cherry aperitif  (i found it in the fridge)
  • 2 tbsp maple syrup
  • 1 tbsp lemon zest
  • 4 tbsp lemon juice
  • 2 tsp vanilla
  • 1/4c melted coconut oil


mix the first four (dry) ingredients together in a bowl. set aside.

mix the next five (wet), not including the coconut oil, ingredients together in a bowl.

i hand mixed with a fork. slowly add the wet mix to the dry, fully incorporating the liquid.

slowly add the coconut oil, mixing continuously, forming the dough.

shape the yums.

either place the yums in the refrigerator for an hour to set OR place in the oven, set at the lowest heat, for an hour. each option will result in a different but delightful texture.

serve plain or with a dab of apple butter.
