Pumpkin Muffins


  • 1c coconut flour
  • 1tsp cinnamon
  • 1/2tsp nutmeg
  • 1/4tsp cloves
  • 1/2tsp baking soda
  • 1/2tsp salt
  • 1/2c pureed pumpkin
  • 6 eggs
  • 4tbsp melted coconut oil
  • 1/3c honey or maple syrup
  • 1tsp vanilla extract
  • 1/4c your passion – chopped walnuts or pecans, raw cacao nibs, bittersweet chocolate chips


Preheat oven to 400 degrees F.

Grease muffin tins with enthusiasm.

Sift first 6 (dry) ingredients in a small bowl. Set aside.

Place pumpkin puree in a medium bowl. Add eggs one by one, mixing well after each addition.

Add melted coconut oil, honey/maple syrup and vanilla extract to the pumpkin and egg mixture. Mix thoroughly.

Add the flour mixture to the egg mixture. Use a whisk to blend well, leaving the mixture slightly lumpy (do not over-mix).

If desired, fold in your passion – nuts or cacao nibs or chocolate chips – into the mixture.

Fill muffin cups 2/3 full. Bake 15 – 20 minutes – until golden on top & a toothpick comes out clean.

Turn muffins out of tins onto a wire rack to cool.
