- 1tbsp olive oil
- 1tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1/4tsp sea salt
- 2c cherry tomatoes, halved
- 1/2c fresh chopped basil
- 3 zucchini, grated lengthwise
Mix olive oil, lemon juice, garlic and salt in a small dish. Set aside.
Place cut tomatoes and chopped basil in a bowl. Add olive oil mixture. Mix well and refrigerate at least one hour.
Toss grated zucchini with chilled tomato mixture.
You can serve right now as it is excellent right at this point, or you can top it with freshly made pesto (like I did…this makes it EXceptional!) or with hummus (like I also did).
