Coconut Maple Cookies

Ingredients for cookies

  • 2 cups shredded coconut (rehydrate slightly if you’d like a softer cookie)
  • 6tbsp coconut flour
  • 1/4c maple syrup
  • 1 tsp vanilla extract
  • 4tbsp melted coconut oil

Ingredients for topping

  • 1/4c packed dates
  • 2tbsp maple syrup
  • 1/2tsp cinnamon
  • 2tsp melted coconut oil


For the Cookies:  Combine all the ingredients.  Roll into balls. Press into cookie shape on wax-paper lined cookie sheet.

For the topping: Combine ingredients in a food processor. Process to desired consistency. Put on cookies and top with 1/4 walnut.

Place in freezer until hardened.

With the sap just finished running, this is a great recipe for this year’s fresh maple syrup.  You could substitute in raw honey if you like.
