1 14oz can artichoke hearts in water, drained, rinsed and chopped
- 1 large tomato, seeded and chopped
- 1/3c green onions, chopped
- 1/4c fresh lime juice
- 2tbsp olive oil
- salt to taste
- fresh black pepper to taste
- cayenne to taste
- 1 avocado, chopped
Place all ingredients except the avocado in a bowl and toss to coat well. Place in refrigerator for one hour to marinate. Add the avocado and toss again before serving.
I’m having trouble keeping my fingers out of this. What a great fresh veggie dish to serve as a side, or add a protein source (like a few plump scallops) and enjoy as a snack.
