Protein Pancakes

Ingredients

  • 1/4c rolled oats
  • whites of two large eggs, about 1/4c
  • 1 scoop protein powder – I used Vega’s Whole Food Smoothie Infusion (gluten-, dairy-, sugar-, soy-free)
  •  1/2 banana mashed
  • 1 tbsp ground flaxseed
  • 1 tbsp almond milk
  • pinch of cinnamon

Method

Mix oatmeal, egg whites and protein powder until blended. Add mashed banana and remaining ingredients, mix until incorporated.

Pour into a heated fry pan.  Fry until small bubbles begin to form, flip and cook just a short bit longer.

Serve with fresh fruit. You could even add a few fresh berries to the batter before cooking!  Enjoy!
