So puddin’ are you looking for a great sweet treat with big flavour and little remorse? Are you looking for an awesome breakfast recipe which will deliver energy and verve for your morning workout? Well, I went checking out recipes and I found this most wonderful of puddings. I made only minor changes, tossing in a few finishing ingredients to add texture.
Applesauce & Oatmeal Puddin’
- 1tsp butter
- 1/2c rolled oats
- 1 1/2c walnut halves
- 12 dates, chopped
- 1c unsweetened applesauce
- 2 1/2tsp vanilla
- 1tsp ground cinnamon
- 1/4tsp salt
- 1/2tsp baking powder
- 1/3c dried cherries
- 1/3c walnut pieces
Combine oats and walnuts in a food processor. Process until fine.
Add dates and process until finely incorporated.
Add the applesauce, vanilla, cinnamon, salt and baking powder. Process until smooth, scraping the sides and bottom.
Stir in dried cherries and walnut pieces.
Divide into four butter-greased ramekins, sprinkle cinnamon on top and place in oven preheated to 350 degrees F.
Bake for 10 minutes. Remove from oven and cool. Place in fridge to chill before serving.
This would be nicely enjoyed with fresh fruit or flavoured yoghurt. We ate it as movie snack and were very pleased with ourselves. Now, I’m needing to poach some apples.
