- 1 c dates – big fat juicy medjools would be perfect. I had honey dates on hand so I used them
- 1/4 cup dried cherries and/or blueberries
- 4 tbsp virgin coconut oil
- 4 tsp lemon zest
- 4 tsp lemon juice
- 1/2 tsp cinnamon
- 3 tbsp vegan whole food smoothie infusion
- 3 tbsp coconut flour
- 3 tbsp maple roasted shelled flax seeds
Add all ingredients except coconut flour and flax seeds to food processor. Process until it forms a thick paste, smooth if you prefer though I like mine with some bits and pieces still intact. Adjust liquids – coconut oil and lemon juice – to create paste.
Spread coconut flour on wax paper. In 1 tbsp amounts, drop processed mixture onto coconut flour and roll with hand into a small ball.
Roll each ball in flax seeds.
These incredibly tasty energy balls will keep in a sealed container in the fridge for a couple of weeks. Freeze them for up to 2 months. Pop one before a run or BawdyMax Class. It will work for you.
Vary this recipe as you please. Leave out the cinnamon and put in some raw cacao and a pinch of cayenne, roll the balls in crushed walnuts instead of flax seeds or roll them in raw cacao and crushed pistachios, add different dried fruit.
