This morning, after a lovely run and a cup of green tea, I was a bit hungry. This quick bread recipe, snacked on warm before breakfast, was just the thing to fill my senses. I recommend this recipe highly.
Coconut Garlic Quick Bread
- 6 eggs
- 1/2c butter, melted
- 2 tbsp honey
- 1/2 tsp salt
- 3/4c coconut flour
- black pepper, to taste
- 1tbsp ground flaxseeds
- 1 tsp garlic powder
- 1c grated goat cheddar cheese
Whisk together all ingredients except the cheese until the batter is smooth. If it is a bit dry, add water by the tablespoon as needed. It should be a pretty moist batter. Stir in cheese. Pour into greased bread pan.
Bake in an over preheated to 350 degrees for 40 minutes or until done (toothpick inserted in center comes out clean).
This is a beautiful unleavened bread. Excellent warm, without condiment or as a great accompaniment to an asparagus omelet.
