Breakfast In The Raw

  • 1tbsp flaxseeds (any variety)
  • 2tbsp water
  • 1 tbsp shredded raw coconut (unsweetened)
  • 1/2 apple, chopped
  • 1/2 handful raisins
  • 1/2 handful dried cherries

  • 1/2 handful raw almonds – chop or leave whole and soak overnight
  • dash of cinnamon

Soak the flaxseeds in the water overnight in a covered bowl.  This will be a gelatinous consistency in morning.  Add coconut, apple, raisins, cherries and almonds.  Stir in cinnamon.  Enjoy!

I topped mine with a bit of goat yoghurt, though it would no longer be a raw meal if you did this.  It could also be enjoyed with a bit of almond or rice milk.  Vary the recipe with whatever fruit, dried fruit, nuts and seeds you have on hand.

I tripled this recipe to serve the three of us.  It is a great way to start the day!
