Apple Custard Pie with Oatmeal Crust
- 1c old-fashioned oats
- 1/2c oat flour
- 1/4c dark brown sugar
- 1/4tsp salt
- 1/4tsp ground cinnamon
- 1/4c butter, melted
- 2 eggs
- 1/4c brown sugar
- 1/4tsp vanilla extract
- 3/4c oat milk (I made my own – grind some oats in a coffee grinder, add water)
- 3 small apples, peeled, cored and cut into wedges
- 1/4tsp cinnamon
Preheat oven to 350 F. Spray an 8 inch pie pan.
For crust: combine oats, oat flour, sugar, salt and cinnamon. Stir in butter and 1/4c water until crumbly dough forms. Press into pan. Place on cookie sheet and bake 15 minutes, until light brown.
For filling: whisk eggs, sugar and vanilla. Whisk in oat milk until smooth.
Place apples pieces in crust; top with filling. Bake 30 – 40 minutes, until the filling is set.
Sprinkle top with cinnamon and a bit of sugar.
Enjoy warm or cold! This is a nice recipe which leaves the apples pieces nicely intact, possessing just a bit of sweetness and made pleasant with the oatcake-like crust.
