Basil Cheese Spread
- 250g softened cream cheese
- 200g feta cheese
- 20g basil leaves
- 60ml olive oil
- 2 sundried tomatoes, chopped (kalamata olives would be good instead but I was sadly out of them)
- 1.5ml cracked black pepper
Combine cream cheese, feta, basil and 15 ml olive oil, and black pepper – mix until smooth. Fold in sundried tomatoes. Drizzle top with olive oil and more black pepper. Serve with warm bruschetta or olive bread.
