Basil Cheese Spread

  • 250g softened cream cheese
  • 200g feta cheese
  • 20g basil leaves
  • 60ml olive oil
  • 2 sundried tomatoes, chopped (kalamata olives would be good instead but I was sadly out of them)
  • 1.5ml cracked black pepper

add the herbs

Combine cream cheese, feta, basil and 15 ml olive oil, and black pepper – mix until smooth.  Fold in sundried tomatoes.  Drizzle top with olive oil and more black pepper.  Serve with warm bruschetta or olive bread.
